Ca’ di Mat is a small boutique estate located in the village of San Martín de Valdeiglesias on the slopes of the Sierra de Gredos (Madrid region). It is the collaboration of winemakers Curro Bareño and Jesús Olivares, known for their work in Galicia with Fedellos de Couto and Ronsel de Sil, along with Paolo Armando and Victoria Serrano. The vineyards span about 20 hectares, planted with old vines (30–80 years) on granitic soils and farmed organically. The estate places an emphasis on minimal intervention viticulture and winemaking, seeking transparent, elegant wines of elevated site expression.
The 2021 Valautín Albillo Real from Ca’ di Mat opens with bright tones of lemon and lime zest, layered with notes of apricot and delicate white blossom. There are subtle herbal and spicy hints in the bouquet. On the palate, the wine shows crisp, lively acidity and a firm mineral core. Its texture is rich, with quiet precision and finishing dry and clean. There is a refined balance here, freshness and depth in equal measure, with the balance of a fine white Burgundy, yet distinctly marked by the granite soils of Gredos.
