Burgundy > Chablis, 100% chardonnay
Sébastien Christophe operates as a one-man operation in Fyé, a quaint village nestled in Chablis. Despite its youth, the domaine boasts over 20 years of history, which is relatively young in Burgundy. After completing enology school, Sébastien returned to Chablis, where he inherited a small parcel of Petit Chablis. With painstaking care, Sébastien expanded his vineyard holdings, starting from this initial plot and gradually acquiring more land. Today, he oversees 9 hectares of village-level Chablis and small parcels in esteemed Premier Cru sites such as Fourchaume, Montée de Tonnerre, and Mont de Milieu. Sébastien adopts sustainable farming practices, hand-harvests his grapes, and ferments them using native yeasts, primarily in stainless steel tanks, with some portions aged in old wood barrels for the Premier Crus.
The Chablis is crafted from 100% Chardonnay, fermented in stainless steel tanks with native yeasts, and aged for 7-8 months in tanks.
Exhibiting a light lemon hue with green reflections, the wine exudes aromas of struck flint, wet stone, and citrus. On the palate, it showcases liveliness and texture, with vibrant acidity that enhances the wine’s complexity alongside the savory fruit concentration.
