2021 Domaine Daniel Chotard Sancerre

I tried this last year, and the one-year aging process mellowed out the acidity nicely. Unfortunately, this was the last bottle from that vintage. I’ll definitely need to restock. It’s truly an excellent wine.

With a light, pale yellow color, it exudes aromas of pears and green leaves. Its mellow and rounded profile boasts medium acidity, a light body, and a touch of salinity. The palate offers flavors of green fruits and cut grass. Although it has a short finish, there’s a subtle hint of minerality that adds complexity. Loire Valley, 100% Sauvignon Blanc.
