A little about the Chotard process:

The winemaking process begins with meticulous hand-harvesting of the grapes, ensuring that only the finest fruit is selected for production. Upon arrival at the winery, the grapes undergo a careful de-stemming process, removing any unwanted stems and leaves to focus solely on the precious fruit. Following this, the grapes undergo a cold maceration period lasting five days, allowing for gentle extraction of color and flavor from the skins.

Next, the grapes embark on a journey of fermentation, a crucial stage where sugars are converted into alcohol. This process unfolds over approximately three weeks, during which time the grape juice transforms into wine under controlled conditions. To further enhance complexity and character, the wine ages in a combination of stainless steel tanks and French oak barrels. While the majority (70%) matures in stainless steel, the remainder (30%) rests in new French oak barrels ranging from 300 to 500 liters in size.

As the wine matures, it undergoes a spontaneous malolactic fermentation, a natural process where tart malic acid is converted into softer lactic acid, contributing to a smoother mouthfeel and enhanced flavor profile. This transformation typically occurs during the spring or summer months, adding depth and complexity to the wine. Finally, after a patient aging period of 15 months, the wine is deemed ready for bottling. Each bottle is a testament to the meticulous craftsmanship and dedication that goes into every step of the winemaking process, resulting in a wine of exceptional quality and character.

Delicate fruit on the nose with more distinct cherry on the palate, perfused by a subtle brininess. Finishes with an herbaceous, almost tobacco-like aftertaste. Beautifully composed; good fruit but with  slight salinalty through to the finish. Beautifully made wine
